Our Story

Mathias Silberbauer started his cooking career at Manfreds, Relæ, and Bæst in Copenhagen. Then he went to Nice and started Pure & V with his colleague Vanessa Massé. At Pure & V he received one Michelin Star just before he decided to go back to Copenhagen and start his own restaurant. Silberbauers Bistro is much more casual than his Michelin-starred fine dining at Pure & V, despite that he achieved a Bib Gourmand review by Michelin Guide within his first half year of running Silberbauers Bistro.
